Apple & Ginger Cake

This is my mother's best recipe and I am ashamed of the emotional blackmail it took to prise it out of her. Exasperated with my pleading she recited the recipe from memory and I wrote it down quickly before she could change her mind! In fairness though, she has had my legendary cheese scone recipe which she bakes for the W.I. Country Markets with much success...

This cake contains grated Cox's apples, chopped preserved stem ginger and sultanas with cinnamon and ground ginger.  It doesn't look especially exciting but it tastes fantastic, especially with a cup of coffee.
