Seasonal cake - Rhubarb & Orange Drizzle Cake

This cake is flavoured with orange zest and has a generous amount of rhubarb. The rhubarb cooks within the cake releasing lovely juices which makes the cake very moist and delicious!  The cake is then topped with a mixture of sugar and fresh citrus juice in the style of a lemon drizzle.

Serving suggestion: This cake is so moist it's almost a pudding!  Try warming slices of cake in the microwave and serve with cream or ice cream or custard.
